Smoked Turkey and White Bean Chili

So, I would have posted this earlier, but we had flu going around our house for 2 weeks.  This was a great leftover turkey dish for Thanksgiving.  I'm definitely going to make this again!  You could use any cooked turkey, I just happened to have smoked turkey on-hand because we smoked one and roasted one.  The smoky flavor really made this dish stand out! 

I served this with ciabata rolls that I had sliced in half and broiled with a little bit of butter and grated parmesan.



Ingredients

3 C chopped, cooked turkey
2 cloves garlic, minced
1 small onion, chopped
1 can (15.5 oz) cannellini beans, rinsed/drained
1 large can whole, peeled tomatoes (undrained, coarsely chopped)
32 oz chicken broth
2 medium zucchini, chopped
1 C shredded carrots
3 tsp chili powder
1 tsp dried thyme, crushed
Salt and pepper, to taste
Cooking spray

Cooking Instructions

In a large pot (that has been coated with cooking spray), cook onion and garlic for 3 minutes over medium heat.  Add the cannellini beans and broth.  Bring to a boil; reduce heat.  Simmer for 20 minutes, covered.

Add tomatoes, zucchini, carrots, turkey and dry ingredients.  Return to boiling, then reduce heat and simmer for 20 more minutes.

Wow!  It's been two weeks since I posted.  We had what seemed like death go through our house and 5 out of 6 of us got some variation of the flu. Yuck!  I'm happy to report we are all on the mend and I can finally get caught up on my blogging! :)  Happy Friday y'all!

1. Candied pecans!  I'm trying this recipe as I type.  My house smells ridiculously amazing!

3. Hyland's Teething Tablets.  The younger diva is teething and these things are pretty much the only thing that soothes her.
